Tofu Rice Stir-fry

SERVINGS: 5 SERVINGS OF 1 CUP EACH

This stir fry features flavors of sesame oil, ginger, and soy sauce.

INGREDIENTS


  • 1/3 cup light soy sauce

  • 1/3 cup rice vinegar

  • 3 Tbsp. sesame oil

  • 1 box Mori-Nu Silken Tofu Extra Firm, drained and cut into 1/2 inch cubes

  • 1/2 cup carrots, chopped

  • 1/2 cup celery, sliced

  • 1/2 cup scallions, sliced

  • 1/4 cup fresh ginger, sliced

  • 1 cup cooked rice

PREPARATION


  1. Combine soy sauce, rice vinegar, sesame oil and tofu. Marinate in refrigerator for a minimum of 1 hour. Heat all above ingredients in wok. Add carrots, celery, scallions and ginger. Stir fry until all vegetables are just crisp-tender. Add rice. Stir fry to heat through. Serve hot.
