Tofu Hamburg Steak
YIELD: 4 tofu Hamburg steaks
INGREDIENTS
For the Tofu Hamburg Steak:
1 block Mori-Nu Silken Tofu Extra Firm, pressed and crumbled
½ cup panko breadcrumbs
1 egg, beaten
½ small onion, finely minced and sautéed
1 clove garlic, minced
1 Tbsp soy sauce
½ tsp salt
¼ tsp black pepper
1 Tbsp vegetable oil (for cooking)
For the Demi-Glace Mushroom Glaze:
1 Tbsp butter
½ cup mushrooms, finely sliced
1 Tbsp all-purpose flour
½ cup vegetable broth
2 Tbsp soy sauce
1 Tbsp ketchup
1 tsp Worcestershire sauce
For the Cabbage Salad with Tofu Dressing:
2 cups green cabbage, thinly sliced
¼ block Mori-Nu Silken Tofu Soft
1 Tbsp rice vinegar
1 Tbsp sesame oil
1 tsp soy sauce
½ tsp sugar
¼ tsp salt
For Garnish:
Thinly sliced green onions
Toasted sesame seeds
INSTRUCTIONS
In a large bowl, combine crumbled Mori-Nu Silken Tofu Extra Firm panko breadcrumbs, beaten egg, sautéed onion, minced garlic, soy sauce, salt, and pepper. Mix until the mixture comes together and holds its shape. Form into 4 oval-shaped patties.
Heat vegetable oil in a nonstick skillet over medium heat. Cook patties for 4–5 minutes per side until golden brown and slightly firm. Remove and set aside on a plate.
In the same skillet, melt butter over medium heat. Add mushrooms and sauté until softened. Sprinkle with flour and stir for 1 minute to create a roux. Gradually whisk in vegetable broth, soy sauce, ketchup, and Worcestershire sauce. Simmer for 3–5 minutes until the sauce thickens to a glossy consistency.
Make Dressing: In a blender, combine Mori-Nu Silken Tofu Soft, rice vinegar, sesame oil, soy sauce, sugar, and salt. Blend until smooth and creamy. Toss thinly sliced cabbage with the tofu dressing just before serving.
Place each tofu Hamburg steak on a plate and spoon over the rich demi-glace mushroom glaze. Garnish with sliced green onions and toasted sesame seeds for an okonomiyaki-style presentation. Serve with the cabbage salad on the side.
