Açaí Tofu Protein Bowl
YIELD: 2 cups
INGREDIENTS
SMOOTHIE
1/2 package Mori-Nu Silken Tofu Lite Firm (refrigerate remaining tofu)
1 packet (100g) frozen açaí puree, unsweetened
1 banana, peeled, sliced, frozen
1/2 cup strawberries, frozen
1/2 cup blueberries, frozen
TOPPINGS
1 small banana, sliced
1-2 strawberries, halved
2 tbsp blueberries
1 tsp granola
1 tsp toasted coconut
1/4 tsp chia seeds
INSTRUCTIONS
In a high-powered blender, add all smoothie ingredients then blend until smooth, scraping down sides as needed.
Pour smoothie into a bowl and add toppings.
