These frozen Tofu Rocky Road Fudge Pops transform the nostalgic flavors of classic rocky road ice cream into a rich, creamy frozen treat with a plant-based twist. INGREDIENTS
1 package (11.1 oz) Mori-Nu Asian Dessert Tofu Almond Jelly Inspired Flavor
½ cup cocoa powder
⅓ cup maple syrup
4 tbsp almond milk
1 tsp vanilla extract
½ cup toasted almonds, chopped, plus more for garnish (at your desire)
⅓ cup mini marshmallows
3 tbsp dark chocolate chips
CHOCOLATE DRIZZLE
3 tbsp dark chocolate chips, melted
1 tsp coconut oil
INSTRUCTIONS
Add Mori-Nu Asian Dessert Tofu to a food processor with the cocoa powder, maple syrup, almond milk, and vanilla extract. Blend until smooth and transfer to a large bowl.
Add almonds, marshmallows, and chocolate chips and fold into the chocolate tofu base.
Pour the mixture into popsicle molds, leaving room for the popsicle sticks.
Insert popsicle sticks into the center of each Fudge Pop and lightly tap molds against a flat surface to remove air pockets.
Freeze for at least 4-6 hours or until completely firm.
In a separate bowl, whisk together melted chocolate and coconut oil to make a chocolate sauce.
Remove the Fudge Pops from the mold and drizzle with chocolate sauce. Sprinkle with chopped almonds and enjoy immediately.

Mori-Nu Asian Dessert Tofu provides a creamy texture, moisture, and structure so the popsicles are smooth – not icy or crumbly!
For smooth Fudge Pops, blend the tofu until completely silky before adding cocoa or sweeteners. Any lumps can lead to uneven texture.
Fold mix-ins carefully, allowing for even distribution. Avoid overmixing to ensure chunks do not sink to the bottom.
Run warm water briefly over the outside of the popsicle molds to release Fudge Pops cleanly.
