Tofu Veggie Kebabs
Spice up your meal with this grilled tofu and veggie kebab recipe that uses sriracha for a flavorful tofu marinade. Great as a side dish or appetizer for vegans, vegetarians, or flexitarians alike!

INGREDIENTS:
1 package Mori-Nu Silken Tofu Extra Firm
2 Tbsp soy sauce
1 Tbsp sriracha
1 Tbsp oil
1 zucchini
4 sweet mini peppers
4 pearl onions
INSTRUCTIONS
- Preheat oven to 400°F.
- Drain tofu and cut into large cubes. Place the tofu cubes on a baking sheet lined with parchment paper. Bake at 400°F for 15-20 minutes, or until golden brown.
- Mix the soy sauce, sriracha, and oil in a bowl. Add the baked tofu to the bowl and gently cover with the sauce mixture. Marinate for at least 30 minutes. While marinating, slice the veggies.
- Thread the tofu and veggies onto the skewers, alternating as you go. Preheat the grill to medium-high. Lightly oil the grill. Then grill the skewers on all sides while brushing with some of the marinade.
- Remove from grill once veggies are desired tenderness and serve while hot.
