Tofu Cordon Bleu

A new take on a classic cordon bleu recipe. This vegan twist uses tofu in place of chicken and is a delicious way to cook tofu in the air fryer!

Tofu Cordon Bleu

INGREDIENTS:

1 package Mori-Nu Silken Tofu Extra Firm

1/3 cup soy milk or other milk alternative

1 Tbsp Dijon mustard

1/4 tsp garlic powder

Salt to taste

4 slices dairy-free provolone style cheese

4 vegan hickory smoked deli slices

1/2 cup panko breadcrumbs
Fresh parsley (optional)

PREPARATION:

Drain tofu well and pat dry with paper towel. Cut into four slices.

In a bowl, mix the soy milk, mustard, garlic powder, and salt. Place the breadcrumbs in a separate bowl.

Layer one cheese slice and one deli slice together. Cut in half and stack them. Cut one tofu slice in half lengthwise and sandwich the cheese and deli stack in between. Dip this “sandwich” into the milk mixture and then into the breadcrumbs, making a nice, thick coat. Be careful to keep the pieces stacked together.

Bake in an air fryer at 360°F for about 15 minutes or pan-fry in a bit of oil until golden and crispy. Sprinkle with fresh parsley before serving.
