1 package chilled organic firm Mori-Nu tofu*
2 cups fresh or frozen pineapple, cut into chunks, divided
1-2 tablespoons agave nectar (depending on preferred sweetness)
2 tablespoons raw walnuts
2 tablespoons shredded unsweetened coconut
1/4 cup crushed whole grain graham crackers*
In a food processor or blender add tofu, 1 cup of the pineapple, and agave. Blend until smooth.
Divide the mixture between two small bowls.
Top each bowl with 1 tablespoon walnuts, 1 tablespoon coconut, 2 tablespoons of the crushed graham crackers, and 1/2 cup of the pineapple chunks.
*Nutritional values using 2 tablespoons of agave nectar.
