Tofu kabobs

Tofu kabobs
  • 1 package Morinaga SilkenTofu - Extra Firm
  • marinade of your choice
  • 16 small mushrooms
  • 1 sweet red bell pepper, cut into 3/4-inch pieces
  • 1 zucchini, cut into 3/4-inch pieces
  • 8 cherry tomatoes
Cut tofu into 3/4-inch cubes. Cover with marinade and refrigerate for at least 4 to 6 hours.

Thread vegetables and tofu onto eight 10-inch skewers.

Grill skewers, or place on baking sheet under broiler for 10 minutes, turning and basting with extra marinade as needed. Serve with rice.
