St. Patrick's Day...

is a favorite for many Americans. It's a time for Guiness, green attire and the one time of year that everyone is apparently a little Irish. If you'd like to brush up on some facts about the color green, why corned beef and cabbage is so popular and where leprechauns come from check out this article.

A vegan spin...

If you love the indulgent favorites of Ireland, here are a couple of vegan versions that you might like:

Vegan Shepard's Pie:

Shepard's pie is a hearty dish that is satisfying and filling. Try this one out.

Irish Lager Stew:

Stew with a little lager? Now that sounds like quite a meal.

Mashed Potato Casserole With Broccoli and a Cauliflower Gravy:

Casserole is always a family favorite, and if you're looking for a little bit of green to decorate the table this evening, this dish should qualify.
