Shiraae, also spelled Shira-ae, is a Japanese dish made with
mashed tofu and any number of vegetables— leafy greens, broccoli, green beans, sliced mushrooms, strips of carrot, etc— mixed with a sweet sesame-miso sauce. It’s easy to prepare and makes a great side dish rich in protein and vegetable nutrients.
