Avotziki Salad Dressing

Salad dressing for 4 to 6 servings (yields 16oz)

Avotziki Salad Dressing
  • 1 -12 ounces Mori-Nu Soft Silken Tofu
  • 1 ripe Avocado, peeled and pitted
  • 1 garlic clove diced
  • 1 Tablespoon Himalayan Salt
  • Juice of 2 Lemons
  • 2 Tablespoons fresh chopped dill
  • ½ medium cucumber finely diced
Blend first 5 ingredients in Blender until well mixed.

Add in last 2 ingredients & pulse until well mixed.

Store in refrigerator.

Serve over chopped mixed lettuce, sliced Kalamata olives, cherry tomatoes, thin sliced red onion and toss with falafel croutons.
