OREO CHEESECAKE

Ingredients:

  • 1 package Morinaga Silken Tofu - Lite Firm
    1 unbaked vegan chocolate pie crust
    8 oz tofu cream cheese
    1 tsp vanilla extract
    1 1/2 cup vegan cane sugar
    2 tsp lemon juice
    3 tsp cornstarch
    2-3 Oreo® cookies, cream removed, crushed

Preparation:

Preheat oven to 350F.

Place all ingredients (except for crust and some reserved crushed Oreos) into a food processor and puree until smooth.

Pour into crust and bake for 30 minutes. Chill in refrigerator. Garnish with reserved crushed Oreos just before serving.
