FRENCH HERB AND TOFU OMELETTE (OMELETTE AU TOFU ET FROMAGE)

75g Morinaga Silken Tofu - Soft
2 tablespoon butter
2 eggs, beaten
30g grated gruyere cheese
Small handful (45g ) fresh herbs such as parsley, dandelions, chives, chervil
In a bowl, lightly break up Morinu silken soft tofu with a fork. Set aside.
Heat butter in a pan, when melted, add eggs. Using a spatula, lightly move the omelette so that the egg runs to all corners of the pan. Fill the omelette first with gruyere cheese, then the tofu, finally the herbs.
Flip the omelette and remove immediately from the pan.
Serve with extra herbs and a crusty baguette.
