MORI-NU CELEBRATION CAKE

Ingredients
1 3/4 C all-purpose flour
2 tsps. baking powder
1/2 tsp. salt
10 Tbsps. butter, at room temperature
1 C sugar
2 eggs, room temp.
1 egg white, room temp.
2 tsps. vanilla
1/2 C Mori-Nu Silken Soft Tofu, pureed
Fruit and Glaze:
1/4 C Mori-Nu Silken Soft Tofu, pureed
1 - 2 Tbsps. orange juice
1 tsp. orange zest
2 1/2 C powdered sugar, sifted
2 - 3 baskets fresh summer berries, strawberries (sliced), blueberries, etc.

Method Preheat the oven to 350°F. Butter and flour two 9-inch cake pans.
Sift together flour, baking powder, salt; set aside. Cream butter and sugar for 2 min. Whisk eggs, egg white briefly. With mixer running, slowly pour egg mixture into creamed butter, mixing till smooth.
Add flour mixture in 3 parts and tofu in 2 parts, alternately, beginning and ending with flour. Stop mixer between additions, scrape sides and bottom of bowl for even mixing. Beat well after each addition.
Divide batter between prepared pans, bake 24-28 min. until cake springs back when pressed gently with finger. Cool on rack; remove from pans, cool completely.
For the glaze, combine puréed tofu, juice, and zest. Whisk in sifted powdered sugar till smooth. Reserve 1/3 of glaze and 1-1/2 cups of the best berries to garnish cake. Combine remaining berries with remainder of glaze.
To assemble cake, split layers in half, spread 1/3 of berry and glaze mixture over first layer. Repeat with 2 of the remaining layers.
Place top layer of cake, spread reserved glaze evenly, allowing some to drizzle down sides. Decorate with reserved berries and serve. Best eaten on day made.

Serving Suggestions
Use pureed silken tofu to add soy benefits and reduce fat in both the cake and frosting.
